Malolactic bacteria cultures. Lowers acidity of a wine by converting malic acid to lactic acid (which is less acidic). Softens the taste of the wine and can help bring out more subtle flavor characteristics. One vial is adequate for use in a 6 gallon batch. Malolactic bacteria is warmed to room temperature and added when the primary fermentation is nearing completion (roughly at 1.020).
