The classic saison yeast strain from Wallonia. Its flavor profile is earthy, peppery, spicy, and slightly sweet. It has low attenuation, so it is some times beneficial to dry the beer out by adding another yeast strain after the initial fermentation is over. This yeast strain can get sluggish is fermentation temperatures are allowed to drop. Some brewers will slowly step temperatures up to as high as 80 to 85F.
