White Labs WLP380 Hefeweizen IV Ale Yeast produces a balance of phenolics and esters where nutmeg, clove, and spice are more dominant than banana and bubblegum aromas. Fermenting at 66-70°F (19-21°C), it achieves 73-80% attenuation with low flocculation and 10-15% ABV tolerance. Large clove and phenolic aroma/flavor with minimal banana, plus refreshing citrus and apricot notes create crisp, drinkable hefeweizen. Less flocculent than WLP300 with higher sulfur production. Pitching rate and temperature dramatically affect flavor—traditional techniques suggest underpitching for classic style. Minor sulfur production dissipates. Ideal for Weissbier, Hefeweizen, Dunkelweizen, Weizenbock. Wyeast 3333 equivalent. Perfect for brewers seeking spice-forward German wheat beer with restrained banana character.
