Description

White Labs WLP099 Super High Gravity Ale Yeast from England is an extreme fermentation specialist capable of producing up to 25% ABV with proper technique. Fermenting at 65-69°F (18-21°C), it achieves 80-100% attenuation with medium flocculation and very high (15%+) alcohol tolerance. Produces ester characters that increase with gravity; malt character dominates at lower gravities. To achieve >25% ABV: use 2x normal nutrient levels, start with 6-8% wort and feed concentrated wort daily over first 5 days with aeration. Excellent for restarting stuck fermentations in high-gravity beers. Slower fermentation than typical ale yeasts. Ideal for Barleywine, Imperial Stout, Russian Imperial Stout, Dessert Wine, Mead, Vodka, Gin, and any extreme-gravity fermentation. Professional distillers and meadmakers rely on WLP099 for consistent performance in challenging conditions.
