White Labs WLP051 California Ale V is a unique hybrid strain recently reclassified as Saccharomyces pastorianus, though used for ales for decades. This Northern California strain produces significantly more esters than WLP001, showcasing cherry and apple character with residual lager-like sulfur compounds. Fermenting at 66-70°F (19-21°C), it achieves 70-75% attenuation with medium-high flocculation and 8-12% ABV tolerance. Lower attenuation than WLP001 creates fuller-bodied beers, making it excellent for Scottish ales, pale ales, IPAs, porters, and browns where malt presence is desired.
