Description
Carapils, also known as dextrine malt, is a lightly processed specialty malt designed to increase body, improve foam retention, and enhance overall mouthfeel in beer without significantly impacting color or flavor. It contributes unfermentable dextrins that remain in the finished beer, helping create a richer texture and longer-lasting head.
Because it is very low in color and flavor contribution, Carapils is extremely versatile and can be used in virtually any beer style—from light lagers and pilsners to hop-forward IPAs and even high-gravity ales that need added structure. It is especially useful in beers that may otherwise finish thin or dry.
Carapils does not require mashing if used in extract brewing, but it can also be included in all-grain recipes as part of the mash bill. Typical usage rates range from 3% to 10% of the grist, depending on the desired level of body and head retention.
